BEEF AND CABBAGE JOES
 
Ingredients
  • 1 lb Ground Beef
  • ½ cup Onion; Chopped, 1 Md.
  • ½ cup Celery; Thinly Sliced
  • 2 cup Cabbage; Shredded
  • ⅓ cup Green Pepper; Chopped
  • ¾ cup Catsup
  • ¼ cup Water
  • ¼ teaspoon Salt
  • 1 tablespoon Yellow Mustard
  • 8 ea Hamburger Buns; (best when toasted)
Instructions
  1. Cook and stir the Meat, onion and celery in a large skillet until the Meat is brown.
  2. Drain off the excess fat.
  3. Stir in the cabbage, green pepper, catsup, water, salt, and mustard and heat to boiling, stirring occasionally.
  4. Reduce the heat and cover. Simmer until the Vegetables are tender, about 25 minutes.
  5. Spoon the mixture onto the bottom halves of the buns and top with the remaining halves.

German Cabbage Casserole

Ingredients

1 md Cabbage
1 3/8 oz Margarine
1 3/8 oz Flour
2 1/8 c Water
1 ts Capers
1 ts Lemon juice
1 c Milk
8 7/8 oz Ground beef
1 sl Bread
1 Egg
1 Onion, finely chopped
1 pn Salt
1 pn Pepper

 

Instructions

Loosen cabbage leaves by putting the whole head into boiling water
until the leaves come off. Cut off the hard stem parts, and put the
leaves in boiling salted water one at a time until they are partialy
cooked.

Mix the meat, bread, salt, pepper, egg and onion together. Make a
white gravy out of the margarine, flour, water, and milk. Season with
salt and pepper and add capers. You can also use tomato sauce for a
change.

Grease the bottom and sides of a large casserole dish. Layer in the
cabbage, meat and gravy alternately. Top with cabbage. Cover and bake
at 375F for 45-60 minutes.

Bramberger Meat and Cabbage

Ingredients

1 lb Cabbage; head, small
1 T Vegetable oil
2 ea Onions; medium, chopped
1/2 lb Pork; lean, cubed
1 lb Ground beef; lean
1 t Caraway seeds
1/2 t Salt
1/2 t Pepper
1/2 c White wine; dry
1 t Vegetable oil
3 ea Bacon; strips, thick sliced

 

Instructions

Remove outer, wilted cabbage leaves and core. Place cabbage in a
large pot of boiling water and simmer gently for 10 minutes. Remove
and drain. gently pull off 12 leaves and set aside. Finely chop the
rest of the cabbage. Heat 1 T vegetable oil; add onions, pork, and
ground beef. Cook until lightly browned. Drain off excess fat. Add
the chopped cabbage, caraway seeds, salt, and pepper. Pour in the
white wine. Cover and simmer the mixture for 10 minutes, stirring
often. Grease an ovenproof dish with 1 t of vegetable oil; line the
dish with half the cabbage leaves. Spoon in the meat mixture, cover
with the rest of the cabbage leaves. Cut bacon strips in half and
arrange on top. Place in preheated 350 degree F. oven; bake for
approximately 45 minutes.

Stuffed Cabbage Rolls

Ingredients

8 ea Cabbage leaves, lg
1 1/2 t Salt
1 lb Ground beef
1/4 t Pepper
1 1/2 c Bread crumbs
1 x Garlic salt, dash
1/2 c Onion, finely chopped
1 cn Tomato soup
2 ea Eggs, beaten

Instructions

Cook leaves in boiling water for 5 minutes; drain. Combine beef, bread
crumbs, onion, eggs, and seasonings. Shape meat mixture into 8 rolls;
wrap cabbage leaves around securely. Pour 1 can condensed tomato soup
into skillet. Add cabbage rolls. Cover, bring to boil. Simmer 35
minutes, spooning sauce over rolls occasionally.
