Bacon Wrapped Meat Loaf

This is especially good as leftovers.
  • 2 Lb. ground beef
  • 2 eggs
  • 1 Pkg. bacon
  • 1 onion
  • parsley
  • garlic powder
  • cracker meal
  • ground beef seasoning
  1. Place ground beef in large bowl, add parsley, garlic powder and ground beef seasoning according to taste.
  2. Grind onion, then add eggs. Add cracker meal until firm. Form loaf.
  3. Place on a rack in a roasting pan, wrapping bottom first.
  4. Wrap entire loaf so that strips overlap. Crisscross strips on top to hold firm.
  5. Bake at 325 degrees to 350 degrees for 1 to 1½ hours, until firm.



10 Minute Meat Loaf


1 pound Ground beef
1 Egg
1/2 cups Bread crumbs
1/4 cups Milk
2 tablespoons Onion soup mix
2 tablespoons Ketchup
2 tablespoons Soy sauce
1/2 cups Swiss cheese; shredded


Combine all ingredients and shape into a round or oval loaf. Place in
microwave-safe dish, cover with waxed paper and microwave on high for 10
minutes, turning dish after 5 minutes, of cooking, drain and cover with
foil. Let stand 10 minutes before slicing. Makes 4-6 servings.


Low-Cal Meat Loaf


1 lb Lean ground beef
2 cup Shredded cabbage
1 Medium green pepper, chopped
1 teaspoon Salt
1 tablespoon Dried onion flakes



Throroughly combine all ingredients. Shape into round loaf. Place
accessory meat rack in crockpot. Place meat loaf on rack. Cover and
cook on High for 4 to 6 hours. Each serving 106 calories. Recipe may
be doubled for larger crockpots.
